Brand: Tasmanian Honey Company
Tasmanian Leatherwood Honey comes from the island of Tasmania, off the coast of Australia. The leatherwood tree is unique to the rainforest regions of the island's west coast. The leatherwood trees don't start flowering until they are 80 - 100 years old. This really is a unique honey. This honey has a smooth, creamy texture and a spicy, buttery taste with tones of citrus and white flowers. With its unique aroma and rich, full-bodied flavor, it is valued by connoisseurs as one of the world’s finest types of honey.
At the completion of harvest, Tasmanian Leatherwood honey is tested by an independent laboratory to measure the presence of compounds that give honey a Total Activity (TA) rating. These compounds generate levels of Hydrogen Peroxide that equate to hospital-grade disinfectant. The term Active Leatherwood Factor (ALF) is used to designate honey that has this special characteristic.
We believe that the health benefits of Leatherwood honey are as compelling, if not more, than Manuka honey.
There are 13 World Heritage Sites listed in Australia. The Tasmanian Wilderness World Heritage Area (TWWHA) was declared one in 1982. It covers one and a half million hectares.
Tasmania’s West Coast Wilderness is one of the most breath taking, raw, untouched, and protected areas on earth. It has pure air, rolling hills, and spiritual rivers. The wilderness area covers approximately one-fifth of the island Tasmania.
Created by the Slow Food Foundation for Biodiversity, the "Ark of Taste" recognises over 5,700 products worldwide that are at risk of becoming extinct due to modern farming practices and environmental issues. These products are also celebrated due to their contribution to culture, history and tradition. The Tasmanian Honey Company’s founder, Julian Wolfhagen, undertook the task of having Leatherwood Honey added to this list.
The Ark of Taste describes the honey this way: "Leatherwood honey is slightly liquid with uniform crystallisation and a smooth creamy texture, and an ochre-yellow colour. The perfume is intense with notes of balsamic scents, which develops quickly into clean fresh notes of citrus fruits and white flowers. The flavour is clean and fresh, very balsamic, with lightly spicy notes in its long finish. Overall, the sensation of eating this honey is very pleasurable: it is creamy, buttery, low in acidity, and melts in the mouth."
